The Colombia Washed Aji Bourbon is a coffee that’s as fascinating as it is delicious! Grown in the beautiful Bruselás-Pitalito region of Huila, Colombia, this coffee thrives at altitudes between 1,780 to 1,900 metres above sea level, where the rich soil and perfect climate create the ideal conditions for its unique flavour. The Aji Bourbon variety is a special mutation of an Ethiopian coffee, known for its complex and vibrant taste.
What makes this coffee stand out is its intricate processing. First, the ripe cherries are harvested and carefully cleaned. Then, the cherries undergo a 24-hour oxidation process, which helps lock in the fruity flavours and boost the coffee’s sweetness. After that, the cherries go through an anaerobic fermentation process, which intensifies the flavour profile even further. The magic continues with a second round of fermentation in sealed bags, followed by a quick, hot-and-cold water soak that helps preserve all those amazing aromas. Finally, the beans are dried in a state-of-the-art system that ensures all the flavours developed during fermentation stay locked in.
